Mayo makes any sandwich better in my book, especially when it’s free from overly processed oils and sketchy ingredients. With only 4 ingredients, it takes less than five minutes to whip the best from scratch mayo up!

Why would you make from scratch mayo?
Most mayos found in the grocery store have ingredients like soybean or canola oil. These are highly processed oils that can be detrimental to your health if consumed regularly for a lifetime. They also don’t use organic or backyard eggs like you can with from homemade mayo.
Ingredients
1 egg
1/2 teaspoon mustard
2 teaspoon apple Cider Vinegar
1/2 teaspoon salt
1 cup avocado oil
Are raw eggs safe?
We get our eggs from neighbors who have chickens and I will occasionally use a store bought organic egg like these to make mayo. I’m comfortable with this based on my research but you will have to decide for yourself. If you are concerned about the safety, there are high quality mayos out there. They have a high price tag though so that’s why I opt to make mine from scratch.
Can I use other oils?
Avocado oil is used because it is virtually flavorless in recipes whereas olive oil or coconut will be strong in flavor. If you use olive oil, go for a lighter oil but still virgin as it is less processed and still maintains much of the health benefits of extra virgin olive oil. As for coconut oil, I wouldn’t recommend it as it hardens when refrigerated. That would be something, wouldn’t it? To go get your mayo out of the fridge and it be solidified!!
What makes this from scratch mayo so easy?
The immersion blender makes this recipe happen in a snap. There’s one less thing to clean as you can make it right in your mason jar. Win-win! Considering the immersion blender can be used for blending soups, making whipped cream, and whisking eggs it’s a multipurpose powerhouse in your kitchen and well worth the initial investment!
Method for making from scratch mayo
- In a mason jar, add the egg, mustard, ACV, and salt.
- Then add your avocado oil.
- Starting at the bottom, blend slightly up and down incorporating a little oil at a time.
- Blend until it’s well incorporated and a thickness you prefer
- Chill in fridge before using

Make sure to have a good hold of your jar or the immersion blender will take it for a ride!
Blending for longer will make for a thicker mayo.
If it’s too runny even after blending for 2-3 minutes, next time add a little less oil.
Avocado Mayo

Healthy from scratch mayo with 4 ingredients!
Ingredients
